So relieved you’ve decided to go for a reputable company rather than the cheapest quote. In my job as a project manager for a building company in SW we have often had to fix problems which arose from going with the cheapest quote.
My biggest recommendation would be to ensure that the waterproofing system used is of a reputable type. My company uses Delta membranes but I’m sure that there are many which would also do the job fantastically well. Another important point to remember is that the pumps which will be fitted need regular servicing. I remember seeing a post not too long ago about various companies that could do that for you.
Completely agree with you that having a basement with a nice ceiling height like the one you’ve mentioned is the way to go, so worth it! I’ve seen basements with amazing ceiling heights (3.5, even 4.5 metres) that provided great space to use like cinema room, playroom, tv room or even an office or a bedroom, rather than a pokey dark space and a total waste of a considerable amount of money.
