We did a Mark Warner holiday last October (somehow! Seems like we might have imagined it now...) and it was brilliant. Although our kids are quite young, 2 and 4, the kids club is brilliant for all ages and they are so active with them, making sure they try all sorts of water sports throughout the week. There's paddle boarding, kayaking, sailing, windsurfing etc, all free to use and very cheap for a few lessons. There's also a big tennis centre. They had made changes to the restaurant etc to ensure social distancing, we felt very safe. We went to Lavante but I've heard great things about Lemnos too.

Check out the Westin Costa Navarino. Not been there, but it came up in on my research last year. Has a waterpark for kids I think. And adult bits in the resort in the twin resort next to it (The Romanos?)

Hi I have a waterfront villa in Corfu, we have our own private jetty and the villa comes with x2 paddle boards
x2 double kayaks and x2 single kayaks  and snorkeling equipment included in the price we also have a speed boat which we rent out on a daily basis to visit two small islands, mouse Island and Vidos Islandor explore the coves, the villa sleeps 6 and has amazing sea views and is in a great location for local tavernas and Corfu town,

Mark Warner or Neilson would be good options. We have been to various MW destinations over the years in Greece and always had a great time. We have friends who swear by Neilson. There are also the Sani hotels which are more upmarket but have sailing facilities and the Peligoni Club which is a beach club that you can join fro a week or two and stay in a villa nearby. Might suit slightly older kids. Like you really hoping that we can get away :D

In the eternal hope that we can travel again this summer, we are looking for a family hotel / villa which has a water sports centre attached to it, so the kids can sail / waterski etc. Ideally in Greece, but all options considered.
