Vegetarian for roast

I am havering a veggie and non veggies round for roast diner and am stumped on what to cook. The vegetarian does eat fish but the others don't like it much....

Any ideas?

This is a simple roast veggie thing I make which always seems to go down well:

You need:-
Basmati rice
LARGE vegetables such as really big tomatoes, peppers or courgettes,
feta cheese
fresh coriander leaves

Cook the rice according to instructions.
Cut the feta into cubes of about 1 cm.
Roughly chop a handful of the coriander leaves.
Mix the three together. You don't need seasoning because the feta is salty enough.
Take the large vegetables (usually two per person is enough for a full meal, or one if you've made side dishes). Cut the top off. Scoop out most of the inside and put the rice mix in it's place. Put the top back on. Roast at about 160 degrees (fan) or equivalent for about 20-25 mins.

PS I did them with pine nuts on top and the tops off once and that was quite good too.
Also - the density of feta and coriander should be fairly high or it just tastes like slightly flavoured rice.

I've been a vegetarian for 25 years and a simple quorn roast has always sufficed me.

Nigel Slater does a delicious salmon wellington with a cucumber and dill dressing. Absolutely delicious, dead easy and the meat eaters will want some too. Should be easy enough to google.

Personally, if you are doing a roast then the whole point of a roast is a good joint of meat with the trimmings. For the vegetarian, a simple vegetable lattice should suffice and can go in the oven to cook once you have taken the meat out to rest. If you are designing a meal around the vegetarian than please don't do a roast, there are so many more interesting vegetarian options than a roast.
Also, watch what fat you use for roasting your potatoes and other vegetables as most vegetarians don't like cross contamination. Same goes for when serving the sides, let the vegetarian have first go so that spoons etc don't cross over into dishes that shouldn't.
