After school/holiday nanny duties

I am sure this question has been asked before and so please do redirect me to other threads if so.
From the Autumn when I return to work, we will be using after school childcare 3 days a week to pick my reception aged daughter up around 3.30pm, then on to day care nursery to pick up my one year old son (he'll have had tea). I'll probably be home around 7 most nights though will need some flexibility to be later on occasion i.e. probably after baby's bedtime but sometimes before the four year old's. We also need cover for the four year old for school holidays 3 days a week- though on some of these weeks I will try to book holiday camps etc.
We are lucky enough to have someone in mind and are soon to be entering discussions on duties, wages etc.Essentially what I'm struggling with is that we're not exactly after a nanny as we only require 12-15 hours a week (though more during holidays).
Is the following a reasonable proposition for this:
Pick up at both school then nursery, prepare easy dinner (food in fridge already; either heat up or really simple like salmon veg and pot) for daughter and snack for son, bath for both, bed for son,oversee homework for daughter, and probably bed on occasion for daughter.
During school holidays on three days a week,pick up from local camp locations in afternoon; or devise own activities /take to play dates I've arranged if looking after my daughter for whole day. Lunches out most likely- would leave a kitty for that; dinner and nursery pick up as before.
And in terms of employment options: what are they? Is there a de minimis number of hours per week before one becomes an employer or does it depend on the nanny declares herself on NI? And how do we handle holiday weeks- cash in hand/invoice at end of month/other? Does this roughly work out at £10 per hour? more ? less?
