Accommodation for girls' weekend in Europe Post Reply

Im trying to organise a much needed weekend away for 3-4, 40-somethings in Sept and am struggling to find accommodation to fit the bill.  Has anyone stayed anywhere they would recommend?  Ideal would be somewhere we could happily chill for a bit - pool or sun terrace -  near a beach and a nice town for meals.   Probably nearer the budget end of the scale than a full blow out.
