The worktop you choose is very much dependant on your wants and needs. There are so many on the market now with such a wide variety of pro's and con's it's difficult to suggest one off the cuff. A good starting point would be a Quartz composite .... very tough, plenty of colours to choose from, widely available and currently very competitively priced.
To answer your question, yes wood requires a high level of maintenance compared to other worktops. They need to be regularly sanded and oiled and a higher degree of care has to be taken when using one.
I strongly believe an instant hot water tap is a great addition to any kitchen, and I think within the next 5-10 years they will be specified in more or less all kitchens like dishwashers are now. Again there are plenty on the market but I think Quooker are still the best. Look at their website, it will give you all the info you need.
