Just an addendum to my original post. I've spoken to the guy in charge of the firm and he says excavating vertically is not in fact a problem, as it should have minimal effect on the structure and he'd outsource that part of the work to a specialist anyway.

If it's just renovation of an existing space you're looking for, then I would recommend Hilltop Construction. A very solid building firm they do a lot of high-spec stuff, but definitely don't do excavation work at all.
