side return extension question

We are planning a side return extension where our neighbours have already built a wall to their side return up to the boundary (but not accross it).  If we have to build a wall alongside theirs how do we excavate next to their foundations?  Is it normal to expose the neighbouring foundations down to the depth required and if we remove all the soil are there risks their property will move?  Just wondered if we are taking a big risk doing this or is it quite normal to dig down and expose the neighbouring foundations to a 1 metre depth before pouring concrete for our own foundations?
