Hi, a decent bay track will not sag in the middle as you have supports etc obviously depending what sort of curtain weight you are trying to hang is most important to what type of rail you use. personally i would always recommend a custom made track which is made on site to fit your window.
I dont know what the aliminimum track that you can bend yourself in John Lewis is like as I have never used it. I alway use a integra regular track. If you do go to John Lewis and want a custom made track they will sell you a silent gliss system. with the silent gliss system it is a closed unit so if there are any problems (fittings brake or track is misused etc) the whole thing has to go back to factroy to be fixed. I have always used a integra track as the pieces can be replaced on site and then everyone is happy. also I forgot to mention I believe a silent gliss system is 2- 3 times the price. Obviously this is what i do for a living and i do have a small website tradecurtains.co.uk
