Ok, firstly, Au pairs should be taken care of whether they work 20 hours or 35 hours a week. They do not technically get paid. They get living expenses (around 80-120 a week), food, shelter, and should be treated as if they are part of the family. This means looking after them even during your holiday periods...
During your holiday, they should have access to your house, food, and get living expenses as they are still living in London.
If your Au Pair is going on holiday, not yourselves, then I can see the dilemma. But I'd still pay her something. You do want her to come back!
